Until it is as hard as you like at the bottom. Start with about 8 hours and go from there or whatever your book suggestive.Faccio in my oven. Place your seasoned strips of meat right above the racks (kinda hang them there) and bake at 200 degrees for about 3 hours. Check for texture. If you want more hard and more rubbery, and leave them more. I usually cook mine about 4 hours, but I like the softer side (false teeth .. Lol)
