Until it is as hard as you want at the bottom. Start with about 8 hours and from there, or your book recommends. I do mine in the oven. Place your seasoned strips of meat right on the grates (just hang there) and bake at 200 degrees for about 3 hours. Check the texture. If you want the toughest and most tender, leave them in longer. I usually cook mine about 4 hours, but I like the softer side (false teeth .. Lol)
